Valentine’s Day Pink Cookie Bars

This is looooong overdue. Oops.

I found this recipe on a website called Mel’s Kitchen Cafe, but I did tweak some things- so I can safely call these cookies somewhat of my own.

YOU WILL NEED:

Cookies:

1 cup of softened unsalted butter (aka 2 sticks)

4 (yes, FOUR) eggs

5 (yes, FIVE) cups of flour

2 cups of granulated sugar

1 tsp of salt

1 tsp of baking powder

1 cup of powdered sugar

1-2 tsps of vanilla (I used 2, but if you like more shortbread-y type cookies, go with one.

Icing

1/2 cup (aka 1 stick) of softened unsalted butter

2.5 cups of powdered sugar

1/2 cup shortening

1.2 tsp vanilla

3 tbsp heavy cream

Red food dye (optional, but I like it :3)

PS- you can add sprinkles at the very end if you want.

 

HERE’S WHAT YOU DO:

Preheat your oven to 375 F, 190 C, or gas mark 5 (someone’s always gotta have the gas mark.)

For the cookies, you’re going to combine the butter and the sugars together until you get something kinda fluffy-lookin. Then, add in the vanilla. Then, SLOWLY (not as enthusiastic as I made the mistake of) add in eight billion cups of flour, baking powder, and salt. You’ll get a huge amount of very sticky, heavy dough.

 

 

You want to grease a MASSIVE 9×13 pan to bake this dough in (I don’t usually grease my pans though- I LOVE parchment paper. Idk, you do you, whatever you want). Plop all that dough in there- don’t be afraid to use your hands to spread it out. You want it as even and smooth as possible- I used the back of a really flat serving spoon towards the end.

When it comes out, it’ll be a beautiful (and heavy) sheet of COOOOKIE.

While it’s cooling, make the icing. Just take all those ingredients and combine until they’re smooth and beautiful. Then add your food dye- I just kinda added a little bit at a time until I got a pretty pale pinkish color.

Your cookie should be cooled after about half an hour. DUMP ALL THAT DELICIOUS SUGAR FROSTING ALL OVER THAT ISH. It’ll be a really thick layer of icing, but it’s soooo goooood. Then go in with sprinkles!

Cut it into squares, and you’re done!

This makes roughly enough to feed a large family for 3 years, but they were all gone in a day- even the people who know I can’t cook to save my life absolutely loved these.
